This is one of the many meals we make with leftover crock pot chicken. Simply put down a bed of rice and start adding the other ingredients. The amounts we give here are for two servings.

How To Prepare

Our rice cooker takes about an hour so we get that started early. You can always save time by using instant rice or even the 90 second microwave packs.

Next dice your bell pepper, half onion, and tomatoes. Place the bell pepper and onion in your pan with some oil on medium heat to saute. Set the tomatoes aside.

Reheat your leftover crock pot chicken in the saute pan with the pepper and onion or in the microwave.

Now put half the rice into a bowl. Cover with half a can of black beans. Cover that with a layer of chicken and the sautéed veggies. Next comes the sliced tomatoes, cheese and guacamole.

Now season with hot sauce, cayenne pepper, salt, and ground pepper to your liking.

I like to top it all off with a dollop of sour cream if we have any at the time. You may notice we were out when we made the video.
